       Grain & Cheese Burger
 
      Yield: 4 Servings
 
  1 1/2 c  mushrooms,chopped
    1/2 c  green onions,chopped
      1 T  margarine
    1/2 c  rolled oats,regular
    1/2 c  brown rice,cooked
    2/3 c  shredded cheese,mozzarella
      1    or cheddar
      3 T  walnuts,chopped
      3 T  cottage (or ricotta cheese)
      1    low fat
      2 lg eggs
      2 T  parsley,chopped
      1    salt,pepper
      1    buns,mayo, tomato, lettuce

In a 10 to 12 inch nonstick frying pan over medium heat, cook
mushrooms and green onions in margarine until vegetables are limp,
about 6 minutes. Add oats and stir for 2 minutes. Remove from heat,
let cool slightly, then stir in cooked rice, cheese, walnuts, cottage
cheese, eggs, and parsley. Add salt and pepper to taste. On an oiled
12X15 inch baking sheet shape into 4 patties, each 1/2 inch thick.
Grill 3 inches from heat, turning once, 6 to 7 minutes total. Serve
on bread with mayo, onion rings, and lettuce.

for your buttie box?

12 slices bread
6 slices American cheese
Butter
4 eggs
1 1/2 cups milk

Cut off crusts and spread bread with butter. Place cheese between 2 slices. Place sandwiches side by side in a 13 x 9-inch baking dish. Beat eggs with milk. Pour over sandwiches and let stand for 1 hour or overnight. Bake 1/2 hour at 350 degrees F.

Serve with cream of mushroom soup slightly diluted with milk poured over the top and warmed

Chocolate Treats, for Chocolate Lovers!

1.) Chocolate Truffles
˝ Cup unsalted butter
2 1/3 C confectioner’s sugar
˝ C cocoa

1/4 cup heavy or whipping cream 1 1/2 teasthingy vanilla

Centers: pecan, walnuts, whole almonds or after-dinner mints

Coatings: coconut, crushed nuts,confectioners sugar

Makes about 3 dozen truffles
Cream butter in large mixer bowl. Combine 2 1/2 cups confectioners' sugar and the cocoa; add alternately with cream and vanilla to butter. Blend well. Chill until firm. Shape small amount of mixture around desired center; roll into 1 inch balls. Drop into desired coating and turn until well covered. Chill until firm.
